My Kitchen Rules contestants: Hear us raw 24 Oct 2014
Fresh from two consecutive MKR People's Choice Challenge wins, Neena and Belinda favour wholesome and earthy flavours and aim to incorporate as many nutrient-dense foods into their meals as possible.
Keen foragers and creative foodies, Neena and Belinda are a formidable force in the kitchen. But with six kids under five between the two of them, they're also smart cooks, keen on simple and quick combinations and always with a healthy cupcake or two prepared for little hands.
Neena and Belinda entered My Kitchen Rules New Zealand with a mission in mind: to change Kiwis' attitudes to healthy food, one meal at a time.
"The best part about these vegan, gluten-free little cheesecakes is that they are made with all-natural ingredients and packed with healthy fats from the pecans, coconut and avocado," the pair say. "They can be easily whipped up in 10 minutes and are creamy and sharp yet sweet."
For the crust |
1/2 cup shredded unsweetened coconut |
1/2 cup chopped pecans or other nuts |
1/2 cup dates (about 12 dates) |
1-2 tsp lime zest |
pinch of pink Himalayan salt |
Process all the ingredients in a food processor until the dates have turned into a sticky paste that holds the other ingredients together. Press evenly into 2 mini silicon moulds or a springform tin, then put them into the freezer while you make the filling.

For the filling |
2 avocados, peeled and stoned (about 1 cups of puree) |
1/2 cup lime juice |
1/2 cup pure maple syrup |
1/2 tsp vanilla paste |
1 Tbsp organic coconut oil |
1 tsp lime zest |
Blend all the ingredients on high speed in a blender or food processor until creamy. Check whether the sweet and sharp flavours are balanced, and adjust if necessary. Remove the moulds or tin from the freezer and pour the filling over the crust, smoothing it with the back of a spoon, then return to the freezer for at least 2 hours to set. Take the cheesecake(s) out of the moulds or tin and rest for 10 minutes before serving. Keep leftovers in the freezer. |
